Since 2008, the visionary culinary couple, Nicolas Decloedt and Caroline Baerten, have been working on the concept of 'botanical gastronomy'. This with the aim of changing the conventional food system through the senses. Humus x Hortense is the result. A fully plant-based and far-reaching sustainable fine dining restaurant. The kitchen serves a botanical tasting menu that moves with the rhythm of 24 micro-seasons and changes every week depending on the harvest of the wild farm Le Monde des Mille Couleurs.
