Chef Danny Bervoets and hostess Elisabeth van Assche settled a few years ago in the rural Lippelo St-Amands. Here in their stately villa, tradition and innovation come together nicely. Danny launches a French-Belgian cuisine that carries modern trends. His virtuosic approach gave the sympathetic host a nomination for best "junior cook of Flanders" several times.
A lot of attention goes to regional and seasonal products, with the sole purpose of reducing every ingredient to its essence, to its purest taste. He often uses herbs, vegetables and flowers from his own garden for this. Elisabeth, who is a botanist by training, looks for special seeds every year and collects them from the Netherlands and England to grow vegetables, edible flowers, herbs and especially special tomatoes in her greenhouse.
The wine list has almost a hundred references and makes a fascinating journey through the whole world.
